<span style="font-size: large;">As we enter a new chapter in the United States of America, post election 2016, with the winning of Donald Trump, a man that has publicly bullied, ridiculed, and made a point to state he would like to register Muslims and deport illegal immigrants who he blanketed as rapists, drug dealers, and killers, we have come to a point where we need to come to a reckoning of who we thought we were, who we professed to be, and who we may actually be and then decide who we want to be. </span><br />
<br />
<span style="font-size: large;">I think that a big part of this is building empathy for others. I either developed or was born with a highly attuned since of empathy. I tend to feel what others are feeling. Empathy is the ability to actually share in the feelings another has, to react the way they do, and to have a really deep emotional reaction to events that may not effect our own person, but do effect them. Without empathy it is a lot harder to step outside our own situation to understand someone else. This can make it more difficult to see their point of view. </span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">One thing I think will help us in preventing some of the horrific things some of us have imagined happening (rise in hate crimes, rise in sexism, rise in sexual assault, mirroring of Nazi Germany or even closer to home Japanese Internment Camps or the Red Scare). You can feel free to disagree that these are things President-elect Trump wanted, but his rhetoric, Twitter feed, and reactions to reporters or at his rallies speak stronger to me than anything you can tell me. </span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">One thing I think I can do is help build empathy and understanding in myself and my children. One area that had been shown to really <a href="https://www.scientificamerican.com/article/novel-finding-reading-literary-fiction-improves-empathy/" target="_blank">help in empathy building is reading books</a> that take us outside our own situation. Since books are something I love anyway I feel like trying to choose a book to read to myself and one to read to my children each month is a great way to help us engage in making a difference in the world. By putting these choices out there I am hoping to help spread the empathy buildling beyond our home. I would love to have people discuss the books as well. What did we learn? What were we surprised by? What challenges did the characters face? </span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">I understand that this is not enough and it is not all I plan to do, but I think it is something all of us can do to create a country where we are more able to have dialogue that is productive and to be able to understand where others are coming from. I truly hope others will join us. </span><br />

<span style="font-size: large;">This month I want to read The Warmth of Other Suns, by Isabel Wilkerson. I heard a great segment on the show <a href="http://www.onbeing.org/program/isabel-wilkerson-the-heart-is-the-last-frontier/9043" target="_blank">On Being</a> with this author which is what inspired me to want to read the book. I suggest listening to the show as well. One of my favorites is the olive oil base, with arugula, goat cheese, and fig jam. Yum, it is delicious. However, due to picky eaters and trying to stay within budgets we don't go there as much as I like. Well the other day I was really craving this pizza, and wanted to make it, but I know none of the pizza crust recipes have done it justice in the past and I did not really want to wait a couple hours for the entire process of making pizza dough from scratch only to be sadly disappointed when it just didn't live up to the one I had in mind. <div>

All of these things made me starting thinking about what I could do that would be super fast, and give me at least a bit of the similar textures from that pizza I love at <a href="http://threesixtykitchen.com/" target="_blank">360 Pizzaria</a>. I decided to grab a rustic loaf of bread from <a href="http://www.traderjoes.com/" target="_blank">Trader Joe's</a>, slice it thin, drizzle it with olive oil, add dollops of ricotta (because I don't actually like goat cheese), add a bit of salt and pepper and toss it in the oven 425F for 10 minutes until it was warm throughout. </div>

I topped this with arugula greens and sliced peaches tossed in about a tablespoon of lemon juice and some olive oil and then some <a href="http://amzn.to/202Y3A5" target="_blank">Jacobsen</a> Salt and freshly ground pepper. </div>

It was about 15 minutes to make and satisfied my craving. It was a perfect light meal, the bread was chewy and had a crispy edge, the arugula was peppery and cooling, the ricotta was warm and creamy, and the lemon was bright. I am definitely making this meal throughout the summer with various combinations of cheese and fruit. </div>

<span style="font-size: large;">Every single Thanksgiving I make a pumpkin pie and my families traditional Cranberry pie. Sometimes I add an additional pie to experiment with, but only if there are a lot of people coming. This year a friend posted a recipe from the New York Times that I just could not resist changing things up this year. So I did not make my traditional Cranberry pie and instead went with the Cranberry curd tart!</span></div>

<span style="font-size: large;">The recipe from the New York Times is a Cranberry Curd (think lemon curd) Tart with a hazelnut crust which I should probably be really enamored with being from Oregon and having lived on a hazelnut tree homestead for the first few years of my life. Alas, I have never fallen for the coveted Oregon nut so I decided from the get go to use pecans as an alternative which in my mind also makes up for the lack of a pecan pie. </span></div>

<span style="font-size: large;">My next dilemma was my lack of rice flour which is called for in the crust, rather than making the crust with a gluten flour I decided to substitute quinoa flour in place of the rice flour, which technically is a seed and qualifies it as a non grain, although I am sure some paleo diet followers would argue with that. Using the quinoa kept the recipe gluten free at the very least. </span></div>

<span style="font-size: large;">A couple notes, 1) I don't have a tart pan so I used a spring form pan and it worked just fine, but did not provide the pretty edge a tart pan does 2) I used a mini food processor with success so if you don't have the space for a full sized one, or don't want to pull the big one out the small version is fine, and 3) I somehow ended up with a bit runny curd, it tasted great, but I think I should have made sure my eggs were the size the recipe recommended and thickened it a bit longer on the stove. </span></div>

I had him pick out an endangered species to learn more about. We went to the library and checked out virtually all the books we could find on the animal he chose, which was an Arctic fox.<br />

Next I had him write down some questions he wanted answered during his reading and when he found an answer he was to write it down under the question. Once all his questions were answered we started to write an outline going over the introduction, adaptions, etc.<br />

Once he finished the outline we worked on a rough and then final draft of at report. He then chose to do a power-point presentation and record his voice over it as his presentation. Here is the result:<br />

We have recently decided to start homeschooling our son who is in third grade. In doing this I really want to make learning fun for both our sakes, but also because I think fun learning is absorbed better. </p>
<p dir="ltr">So my first step was a search on Pinter eat of course, but my next two steps were a trip to Powell's Book store, the Learning Palace, and the library to search for books to help with creating a curriculum. I am not going to get into the too much more right now,  but I was really excited about one book I found at the library so I thought I would share that, because it is all about games to play to get your kids thinking and learning. I am excited to use this book and think it would be a great addition to any family library of games. </p>

<p dir="ltr">There are games for many levels, and subjects including reading, writing, math, memory games, and they how many of the games are great for developing other strategies for thinks like sequencing historical events. </p>
<p dir="ltr">I really like the descriptions of the skills developed and that they include a section they describe as including your older children, but looks more like helping your kids not be at eachothers throats the entire time to me, otherwise known as cooperation. </p>
<p dir="ltr">I am definitely adding this book to my Christmas list as I think it would make a great addition to our learning library. <br><br></p>

I have done portraits, events, and more as an exploration of this. I always have enjoyed it and will continue to do so, but in an effort to add to my families income I have finally made the jump into selling my photographs.<br />

My lovely mother had her birthday last week in the midst of a really crazy week for me. We decided we would celebrate her birthday this weekend instead due to my other obligations. I started out thinking I really wanted to make something that has ginger, lemon, and <a href="http://bloggingemilia.blogspot.com/2013/02/the-best-chocolate-mousse-tart.html" target="_blank">chocolate</a> and thought a lemon cheesecake with a ginger Graham cracker crust and a layer of dark chocolate would be great, but this seemed a little too heavy for the hot August says we have been having in <a href="http://bloggingemilia.blogspot.com/p/fun-out-and-about.html" target="_blank">Oregon</a> and <a href="http://bloggingemilia.blogspot.com/p/fun-out-and-about.html" target="_blank">Washington</a>. </div>

From there I was inspired by the crispy ginger cookies at Trader Joe's to create a crumble that mimicked a Graham cracker crust. I then added in a bit of chocolate ganache which I added a bit of fresh ginger to while hearing the cream and layered them all together.</div>

The end product was a parfait with the punch of tart lemon, the slight spice of ginger, and just a hint of rich bitter chocolate. Over all it was a success. </div>

The ganache was a recipe I found on pinterest as well, but I added in fresh ground ginger which I just freeze so it is ready when I need it. I find freezing it makes it easier to grate on my micro plane. </div>

<b>Ginger Cookie Crust Crumble:</b></div>
<div dir="ltr">
1/2 box og Trader Joe's Ginger Cookie Thins Crumbled<br />
1/2 Stick Butter Melted<br />
1/4 c. Almond meal</div>

Preheat oven to 275° F. While the over is heating line a cookie sheet with a slight edge with a nonstick cooking mat. Place the 1/2 box (one sleeve) ginger cookies on a cutting board in a plastic bag and roll over with a rolling pin until there are just bread crumb sized pieces. Alternatively use a food processor and pulse to create bread crumb size pieces. Place the bread crumbs with 1/4 c. Almond meal and the memories butter in a bowl and mix until it is all combined. Spread out in a thin layer on the cookie sheet and then bake for 20 minutes, stirring after the first ten minutes and then every five minutes after. </div>

This should create a crispy crumble that you can layer with the mousse. </div>

<b>To Create the Parfait: </b></div>

Find 8 tall thin glasses and add 1 tablespoon of ginger cookie crumple top the bottom of the glass. Next layer a thin layer of the chocolate ganache, I put the ganache in a plastic zip lock and cut a small corner off and then pipped it over the cookie crumble. </div>

Next add about an inch and a half of the lemon cheesecake mousse, filled by about 1/2 a tablespoon to a tablespoon of cookie crumble. Add another inch and a half, or fill to almost the top of the cup with more lemon mousse, finish with another 1/2 tablespoon of ginger cookie crumble. </div>

In the week leading up to the fourth of July I planned a lesson for the kids that was entirely taught through the making and use of play dough. </div>

I wanted to combine a history lesson about the fourth of July, chemistry, math, art, and motor skill learning, because hey I thought of a plan that would do all these things so why not! :-) I crafted an activity that both teaches and is hands on fun for the kids. </div>
<div dir="ltr">
So I set out to look for some good fourth of July activities to do with kids and kept coming upon goo and gak ideas. This sparked my thinking a bit and I thought, what a great way to add chemistry to our day. </div>
<div dir="ltr">
I started thinking about it some more and decided I really wanted the kids to be able to make some flags and so play dough would probably be a great way to combine chemistry and sculpting for the kids. </div>
<div dir="ltr">
Once I had this plan I decided to add taking about what chemistry is, and the different forms of matter. We talked about example of these things (solid, liquid, gas, and there is also plasma and another, but we stuck to the three basic ones). After discussing matter, we set out to do our own chemistry by making quick and easy play dough. </div>
<div dir="ltr">
With our play dough finished we first made little beakers out of the play dough and put an initial over the top of each standing for either liquid, solid, or gas. Then I asked my oldest to fill the breaker up with play dough molecules as they would be if they were in their various states. </div>
<div dir="ltr">
For the gas the molecules will be far apart, for the liquid they will be closer together, and for the solids they will be even closer. </div>

After this we made three dimensional (8 year old) or two dimensional (5 year old) shapes with the play dough to practice our geometry skills. </div>

Next we worked on making an American flag out of our play dough as well as fire works. I talked with the kids about when the fourth of July started and why we celebrate it. I am not convinced they picked much up for this, but that is why we repeat things over and over in new lessons and another year, right? </div>

We still have a few days left until the fourth and so I checked out a few books with more about it and May plan some more activities about this United States holiday.</div>

Well Oregon and Washington are officially hitting hot summer days with temperatures into the 90s and 100s. So we are breaking out our arsenal of sweet, easy, and cold summer treats. </div>

Of course one of the first things many people reach for in the summer heat are popsicles and ice cream which have their place at our house, but I prefer to try and find some healthy cold treatsas well. I do really like my <a href="http://bloggingemilia.blogspot.com/2012/01/what-to-do-with-left-over-smoothie-zoku.html" target="_blank">Zoku popsicle maker</a> for making quick healthy popsicles at home and my <a href="http://bloggingemilia.blogspot.com/2012/01/smoothie-recipe-calories-count.html" target="_blank">immersion blender</a> to make frozen drinks like smoothies or <a href="http://bloggingemilia.blogspot.com/2012/06/watermelon-cooler-perfect-summer-drink.html#" target="_blank">frozen treats</a> like all fruit sorbet. However one super easy and delicious summer treat is frozen grapes. </div>

I can not take the credit for thinking of this though. When I was working for a family over summer breaks from college the mother used to do this as a <a href="http://bloggingemilia.blogspot.com/2012/01/calories-count.html" target="_blank">snack</a> for her kids and it was so refreshing and wonderful that I have continued this summer treat in my own home. I have to reintroduce it every summer, especially to my son who is sceptical of most things, but after walking away from the first bite and saying it was horrible, he returned to say he wanted more and they were good. </div>

There is just something about them that feels extra refreshing when compared to other frozen snacks. I love them. All you do is rinse the grapes, pop the whole thing with the stem and everything, into the freezer and then eat them when they are frozen. For small kids I recommend cutting them in half after they have defrosted a bit, not too much though. They are hard and round so beware of choking hazards. Again cutting them in half helps a lot. </div>

He wants to do this every day and include everything he would normally have at school. He decided he wants to go back school in the fall as the kid that knows more than anyone else (he laughed and said, well that will probably be a fifth grader). So starting on the first day of summer break we started....well....school. I am trying to come up with ways of making this fun for him and my younger daughter, who is excited by the prospect as well. </p>
<p dir="ltr">Here is how our day is breaking down so far. We get up, have breakfast, then do reading. I have them both read on their own and ask him to choose a longer book. </p>
<p dir="ltr">My daughter is going into kindergarten, but can read independently for the most part. Once they finish their book they are to identify a few things for the story they read. My son is supposed to write a mini book report with the protagonist, the antagonist the setting, the conflict, the moral, and the resolution. </p>
<p dir="ltr">After my daughter finishes her reading she is supposed to write the name of the main character and draw a picture of that character. </p>
<p dir="ltr">So far they are both enjoying this part of the summer learning and find it fun. </p>
<p dir="ltr">While they do their reading I clean breakfast up, have my morning tea or coffee, and make sure I have the plan for the rest of the day in order. </p>
<p dir="ltr">So far we have only done a few days of really putting this into action and I am not sure the kids will want to keep it up over all of summer and I only want to do it if they are enjoying it, so we will see how it ends up.</p>
<p dir="ltr">After reading we do other school subjects. Sometimes they are combined projects, other times they are field trips, or movies. </p>
<p dir="ltr">So on our first day we did math which included using ten pennies to add and subtract numbers one through ten for my youngest. For my oldest we learned the area of a square formula using foam paper cut into one big square and a rectangle, with enough smaller squares to cover each completely. I taught him how the area of a square is it's base times it's height. We used the small squares to measure how many square fit across the base and how many fit across the height. I then have him problems with drawings of squares to solve on his own. </p>
<p dir="ltr">Next we decided to come up with a school mascot. We did research about the symbolism of various animals we were interested in and colors we liked. Then we choose our animal and colors and wrote down some of the important words each symbolically stands for and drew a picture of our animal and then made a flag including our colors. </p>
<p dir="ltr">This project included practicing compluter skills and online research, science, reading, a bit about differences between cultures, and art. </p>
<p dir="ltr">After recess and lunch we headed to the public library to check out books on our animal and then watch the movie they were playing for their summer program. </p>
<p dir="ltr">We also checked out a book on learning to draw, because that is something my son has been worrying hee is not good enough at. We decided a good way to make him feel better about it would be to learn more about how to do it. </p>
<p dir="ltr">Every learning project we did today we did with things we have around the house and could easily be adapted to fit other learning needs. </p>
<p dir="ltr">We will see how this develops over the rest of the summer. </p>

When I was a child my parents separated and then did end up getting divorced. While I can't imagine it being any other way, I do know that feeling that others understand what I am going through has always helped me. </span><br />

<span style="font-size: large;">While my husband and I are not getting divorced, but he is a <a href="http://www.brasierlaw.com/" target="_blank">divorce attorney</a> in Portland, Oregon and so he goes to court to do divorces so in combination of <span style="font-size: large;">seeing hi<span style="font-size: large;">m go to court</span></span> and hearing about these other Mom's in my Facebook group currently going through a divorce I have been thinking about what the kids of divorce might need to help them through it. </span><br />

<span style="font-size: large;">One thing that I immediately thought of is books. Kids love books, they are a good way for parents to be close to kids, demonstrate others feelings, develop empathy, and spark conversation. If a parent reads a book to a their child about divorce it is bound to bring up may things to talk about as well as demonstrate to the child that the parent understands it might be hard to the child to be going through this experience. </span><br />

I have had them give cookies, drawings, little baskets of snack foods, Christmas tree ornaments, and gift cards.</span><br />

<span style="font-size: large;">This year I attended a little craft fair that was aimed toward showing examples of crafts that people could make instead of buying gifts. They wanted to raise awareness about giving in a way that is not as commercialized and then making donations to people that are in a position of greater need than us. The cherish that was holding the craft bazaar was also accepting donations that could go to various charities, they suggested donating to a place that helps create access to clean water for people in Africa and organizations that help stop sex trafficking among others.</span><br />

<span style="font-size: large;">One of the crafts, was a Femo marbled bowl, this looked like something I would actually try and the might I thought about it the more I thought the kids could do it. I have also seen this craft following around the internet mostly on Pinterest.</span><br />

<span style="font-size: large;">I took my five year old to Michael's <a href="https://www.blogger.com/">craft</a> store and looked at the clay. After picking out a few colors, I was becoming too quiet that this was not something the kids could do because the clay is incredibly hard, and I do not say this lightly, it is like those really old bubble gum balls that just about break your teeth and make your jaw sore after the first ten seconds of chewing.</span><br />

<span style="font-size: large;">I was relieved when I found a mixed color package of this stuff called Pluffy by Sculpey. It is so much softer and my kids were totally able to work with. I also bought some of the harder clay for me.</span><br />

I have found this book to be good at offering practical problem solving techniques in ways that will be easy to apply, they are for the most part really really helpful ideas that I can see applying and actually having them work. I remember some of these things begin used with me as a child, like establishing good table talk during dinners by asking questions or telling stories. Having a game night and a movie night to help the family as a whole connect and help boys (or kids in general) feel loved and valued as a part of the family. </span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">I do think at times the authors are stretching a bit on some of these traits being a "boys" trait, but the book is helpful anyway. I really do feel like most if not all of it could apply to by daughter as well. I sometimes wonder how much of gender is constructed and how much is innate. I think from my psychology classes I feel that there is an good argument for nature via nurture. Nature via nurture basically means that we have were created to have certain genetic make ups that could be molded in a different direction based on the things that happen around us. You have to look no further than <a href="http://www.livescience.com/37703-epigenetics.html" target="_blank">epigenetics</a> to see evidence for this. </span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">In any case the book may just be more broadly applicable to both genders rather than just boys and I do think it is worth the time to read. If no other reason than the "putting it into practice" sections are really helpful and easy to do. Beyond that I think that there are things in the developmental phasis that the authors bring up that can be easy to forget when you have a kid who likes to play aggressively and is beginning to really push limits to try and assert their independence. For example, that at this same stage they are also really craving love and the way kids feel loved is not the same for every stage (time versus trust, etc). </span><br />

This cute little picture book is about a cleaver little inch worm who convinces a robin, who is about to eat him for lunch, that he is usefull and can measure the robin. The robin wants his tail measured so he does not eat the worm. After his tail is measured, carries the worm off to measure other birds. One bird at the end makes an unusual request, measure my song. Well the worm feels he can't do that so he finds a cleaver way to escape. <br />

I thought about this and although it is true you might not be able to measure a song the same way you measure a tail or a beak, you can measure it. I think you could measure it by seeing how many times the worm can move during the song, or by how may seconds long the song is, and I am sure in other ways that I am not thinking of. I decided that this might be a fun measuring experience for my daughter and I to experiment with. <br />

So we read the book and discussed different ways the worm might have approached this problem. We then made an inch worm out of playdoh and started measuring things. We then turned on a song and experiemented with measuring the song with how many times we could move the worm during the duration of the song. We also observed how the song was a particular length of time.<br />

My daughter seems to have enjoy and absorbed both of these measurement methods as she had been going back to them both frequently over the last few days. :) I hope you find this useful and have fun with finding ways to measure a song and other things in your house. <br />

These are the photos I took to send our to family as our holiday cards, they are not the traditional formal pictures I take, but I thought the kids would enjoy this sitting more. I set up a secret hot cocoa picnic compete with artisan marshmallows and candy canes. It is fun to give them a big treat like that every once and a while. <br />
<br />
After taking the photos we went on our annual December float on the Willamette River with our kayaks lit up for the Illuminata Regatta. It is always fun, but this year was so amazingly pleasant. I don't know if it was the really cold (14 degree ferenheit) weather we had in the weeks leading up to the Illuminata Regatta or what, but it felt so warm we didn't even need our gloves!<br />

I thought it would be nice to use the homemade playdough I had sitting around and something with fall colors.<br />

I decided that I could easily make colored pasta and then shape the playdough into the shape of a turkey's body. The kids could then use the pasta to decorate the turkeys. I also added in some long pieces of dried spaghetti so the kids would be able to make longer "feathers" by putting the penne pasta over the spaghetti pasta.<br />

While the kids were making their turkeys we talked about the colors, what the playdough felt like, if the noodles stayed in well, what patterns they could make, how they could make the noodles look like feathers on a turkey, and how the colors of the noodles and turkey looked a lot like fall leaves. <br />

They enjoyed this activity a lot and after finishing their turkeys moved on to making their own shapes with the playdough and decorating those. It is great for fine motor skills, sensory play, creative play, learning about patterns, and colors. <br />

To make the pasta all you do is get dried pasta, fill a bowl half way with white vinegar and add food coloring of you choice (I used probably at least 10 drops of color per bowl) then add pasta so that it is covered by the vinegar. Let it sit for about 5 minutes, maybe a little more, stirring a couple times while it sits. Then dump out the liquid and lay the pasta flat on a cookie sheet to dry. It took about two hours maybe three for ours to dry completely. <br />

We take a weekly trip to the library for story time and to check out books. Usually I let the kids check a few out and I choose a couple to check out as well. I try and find books that fit into a weekly theme that I have in mind or that are seasonally appropriate. So a few weeks ago I spotted this cute book about a squirrel who is busy finding food for the winter (called The Busy Little Squirrel by Nancy Tafuri).<br />

The little squirrel picks up various fall foods and takes them back to his nest. At the end of the book you see him asleep with all of his food. It is a cute book that teaches about what a squirrel does to get ready for the winter and shows some of what they eat.<br />

I immediately started thinking of ways I could create activities surrounding this book, so I checked it out. We read it several times before ever getting to the activities, but finally I set things up and we did some writing, math, and science exploring some of the things that squirrel might have picked up to eat. <br />

I got out a large bowl of water for a float or sink test, a measuring tape to measure each item, and some fall vegetables (a sweet dumpling squash and a bright orange squash), an apple, grapes, and dried fruit and nuts. <br />

The plan was to read the book and then talk about why the squirrel was saving for food and if we had any of the same things. Then we put the things in order from largest to smallest.<br />

I had written out a list of what each thing was before hand so then we measured each thing with the measuring tape and I wrote how big it was in yellow and then my daughter traced the number with a black marker.<br />

Next, for each item, we predicted which items would sink and which would float. Then we put each on into the bowl of water to test our predictions. We then put a mark in a column for each one that sank and one in another column for each that floated.<br />

This was my daughter's favorite part of the activity and she wanted to do it several times. We then drew a picture of one of the items as an added art activity. It would also be great fun to use the items to paint or make prints into play-dough. <br />

This is a great simple dessert that also has the added advantage of being really quite healthy. It also happens to be gluten and dairy free. A great paleo or vegan dessert as well.<br />

I first served this dessert to a group of my family members who were visiting from out of town. We had a large dinner of my favorite ribs, with mashed potatoes, fresh tomatoes with basil, garlic, olive oil and vinegar, and other fresh vegetables from a farm box I picked up. For Dessert I wanted something just as fresh, but I also wanted it to be really easy to put together with people there. This fits the bill. <br />

Roasted Pears With Coconut Whipped Cream:<br />

For the Pears:<br />
Half a pear per person, slightly firm<br />
A sprinkle each of cinnamon and cardamum<br />
About 2 teaspoons real maple syrup per pear half<br />

For the Whipped Cream:<br />
A can of Whole coconut milk in a can (or Trader Joe's Coconut cream, in a can)<br />
Chilled well (I usually just keep a can in the fridge in case I want it) <br />
A teaspoon vanilla extract<br />
A tablespoon of maple syrup<br />
A pinch of ground cardamom<br />

Wash the pears, cut them in half length wise and use a melon baller to scoop the seeds out. Sprinkle the pear with a bit of cinnamon and cardamom and then lightly pour maple syrup on them (about 2 teaspoons). Place in the oven for 30 minutes to bake until soft. <br />

About 5 minutes before the pears are done get your mixing bowl out of the freezer and set it up. Open up the can of well chilled coconut milk and you should see a firm thick white layer. Scoop out just the very firm white layer into the mixing bowl, leaving behind the clear liquid for another use. Start mixing the coconut milk in the mixer on medium speed, add in the vanilla, maple syrup, and cardamom. What should happen is the coconut milk should become fluffy and look like whipped cream. <br />

Serve the pears hot with the whipped coconut milk on top. We also served dark 80% chocolate with them and some people put small pieces in the middle of the pears so it would melt, that was great!<br />

<span style="font-size: large;">I did a lot of searching online for Father's Day ideas and how to include the kids in making the gift for Father's Day. I discovered many photo shoots of the kids along with prop ideas and framing ideas. You can check out many of the ideas I came upon on my <a href="http://pinterest.com/ecarleyroe/fathers-day-and-other-holidays/" target="_blank">Pinterest board about Father's Day</a>. I took a few of these ideas and combined them to get what you see above.</span><br />

<span style="font-size: large;">I really liked the idea of the kids finishing the <span style="font-size: large;">sentence</span> I love Daddy because... and using their answer in the photo shoot. I also thought it was really cute to see kids dressed in their Father's work clothes. I think it would make a nice sequence if we did it year after year to see how much they have grown. I also really like the sign for I love you in sign language, I grew up using it with my mom and have used it with the kids so I really liked the tracing of the child's hand and having it folded to say I love you in sign language and holding a heart.</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">Each of the kids also answered questions about Daddy (like what is his favorite food, what does he do at work, what is is favorite thing to do, etc). I plan to do that year after year as well and see how the answers change.</span><br />

<span style="font-size: large;">The other day at the super market I saw these beautiful orange apricots and felt like I really needed to find a way to use them. I decided to experiment with making stuffed apricots with sour cream or ricotta and rosemary.</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">I ended up trying out both and found that I really preferred the ricotta because there is already a lot of tartness from the apricots so the sour of the sour cream did not counter that flavor enough for me. I added a little bit of finely chopped rosemary and maple syrup to the cheese, scooped the mix into the apricot and broiled it until the cheese was just lightly browned.</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">The combination was amazing. I tart flavor of the apricots combined with the slightly sweet cheese and woodsy rosemary was amazing. I was mostly amazed at how filling this was considering the small size of an apricot and the small dollop of ricotta it takes to fill the space where the pit was.</span><br />

<span style="font-size: large;">This recipe became my breakfast for the next few days and I am sure to revisit it throughout the apricot season.</span><br />

The first of these (and my favorite) was using container lids left over and saved from different things, like milk jugs, to stamp the planets of the solar system. We took several different sized lids and set them out with paints and brushes and two pieces of paper tapped together. We painted the flat side of the lids and stamped the sun and planets in order (my six year old stuck to that plan, my three year old just stamped wherever).</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">We used a picture of the solar system for guidance and my son labeled the planets. We also read a book called, <i>If You Decide To Go To The Moon</i> by Faith McNulty, which shows a kid preparing for a trip to the moon in a rocket. He gets supplies and games and during the trip talks about being lonely. He gets out on the moon and walks around in his space suit. He discovers that the moon is lacking a lot of the lovely things that the Earth has. On his way home he realizes how special the Earth is because it is the only place with the ability to have life which creates so much beauty and so we really need to protect the Earth.</span><br />

<span style="font-size: large;">My Grandparents were visiting for a few weeks in March and my Grandma brought along some craft supplies and a project idea that she was just so excited to have everyone do. She set up by putting down a disposable table cloth a tin baking dish slightly larger than 8 by 10 and about 4 inches deep, cans of shaving cream, two boxes of food coloring, stir sticks, card stock paper cut to maybe 7 by 9 inches pieces, and a squeegee. </span><br />

<span style="font-size: large;">She had us fill the tin with a bunch of shaving cream and then flatten it out using the squeegee (or hands and by the way super flat is not that important here). </span><br />

<span style="font-size: large;">Next take the stir stick and place in in the shaving cream and move it through the drops of food coloring to make a design, any design will do. </span><br />
